Chile
A meat, bean, and beef dish that is without tomatoes
Lasagna Variation
A type of burger with chees
A potatoe soup
and last but not least..
Funnel Cakes and/or cinnamon rolls.

I try finding these recipes and they end up no good.

I make my chili with tomatoes. I guess you could just brown the meat and onions, throw in beans, seasonings, and maybe a beef broth?

Steffo, are you on those drugs again this week? :D What the heck is a "lasagna variation?"

Ok, I'm not just passing out my chili and potato soup recipes for free to the general public ... First off, I stole the potato soup recipe fair and square :eek: Secondly, I made a few people at this site pay for the cookbook they're in, so it wouldn't be right to just give them to you and everyone else.

But here's a recipe for a soup that will curl your toes and I just made a pot of it yesterday, ranks right up there with the potato soup and the Vietnamese lemongrass soup on my list of all-time best soups ... If you like spicy stuff like chili, you will like this.

The Best Mulligatawny In The World

1 to 1½ lbs boneless chicken, cut into bitesize pieces
2 cups apple (Braeburn apples are best, peeled and chopped)
1½ cups white onion, chopped
1 cup carrot, peeled and chopped
1 cup celery, chopped and "de-stringed"
1 cup green bell pepper, chopped
4 tblspn all-purpose flour
3 tblspn curry powder
2 tsp ginger
4 cans (14½ oz size) of chicken broth
1 can (6 oz size) tomato paste
½ jar (8 oz size) London Pub chutney
1 tblspn crushed red pepper ("pizza pepper")



Some people like to use two different cooking vessels for this, a cast iron skillet for the chicken and a dutch oven for the soup ... I just use one big honkin' soup pot for all of it.

A) Add 2 tablespoons of oil (veggie or olive is fine) to a pot and sauté the chicken pieces for 3-4 minutes over a medium-high heat ... Season chicken with a little black pepper and, if you wish, salt ... Remove chicken and drain.

B) Turn heat down to medium ... Add apple-onion-carrot-celery-bell pepper to oil and sauté for about 6-8 minutes ... Slowly stir in flour, curry powder, ginger, more black pepper and a little salt ... It should start to become sort of a paste around the veggies leaving no oil/liquid in pan.

C) Add chicken broth, tomato paste, chutney and red pepper and turn heat back up to bring it all to a boil ... Stir often as the paste and chutney begins to melt and thicken the soup.

D) As soon as it starts to boil, turn down to a simmer and add the chicken pieces ... Simmer 30 minutes and taste, add seasonings as you see fit.

Garnish with chopped parsley or cilantro ... Serve with crushed red pepper for you and/or your guests to add as they see fit ... A good loaf of chiabatta bread or pita bread is nice as well ... Will absofrickinlutely clear up a stuffy sinus condition :cool:

Makes about 8 big bowls.

YUM! Hmmmm..... I was looking for a good soup recipe! Just thinking about it this morning, actually! :thumbsup:

I just made a good potato leek soup, Steffo. I got it off the internet. The 3 oz. of butter is 6 tablespoons..... which ended up being alot, but the leeks and celery and onion got a nice buttery flavor. Then I just skimmed the butter off the top after I put the soup in the refrigerator overnight.

POTATO LEEK SOUP

3 ounces butter
4 leeks, -- chopped
2 stalks celery, -- diced
2 onion, -- chopped
3 potatoes, -- chopped
1 1/2 quarts water
1 1/2 cups cream
Salt
Pepper


In large pot combine butter, leeks, celery and onion. Saute for about 8
minutes. Add potatoes and water. Bring to a boil. Lower heat and simmer for
about 30 minutes. During the last 5 minutes of cooking add cream and
seasoning. Serve hot.

Actually, without soup, there'd be very little reason to live!

I made myself a nice little vegetable soup last night. It's a packet of dried veggies. I throw in a package of soup greens, a few small halved onions, lots of cut up carrotts (the baby carrots don't taste quite the same as regular carrots), lots of fresh chopped dill and parsely, a bit of kosher salt, lots of black pepper. Last night I also threw in some flanken. 7 cups of water per package, and let it cook for about 1 1/2 to two hours over low heat, covered. I take the cover off for the last half hour or so to let it thicken up. Two bowls of that with a nice chunk or few slices of challah (or even french bread or baguettes would work), and that's my dinner.

I made two packages last night, so I'll be eating that for a few days!! :bigsquare
