I had pork chops tonight,drowned in BBQ sauce.I may regret that one later.

3 big ass boneless, skinless chicken breasts, 1-1½ lbs
2 big apples, 3 medium
1 large onion, pick red-white-yellow
1 green bell pepper
1 cup chopped celery
1 cup chopped carrots
2 tblspns all-purpose flour
1½ quarts chicken broth
English Pub Mango Chutney
Small can tomato paste
olive oil
curry powder
fresh garlic cloves
paprika
ginger
black pepper
salt

first, the spices, muy importante ... all curry powders are different, no two are alike just like snowflakes ... i use a very hot madras style since if you're going to have currym you should really have curry ... that's always been my motto ... mix 1 tblspn of curry with ½ tblspn each of paprika and ginger plus some salt and black pepper ... put that on the chicken and either back it for 20 minutes (to save fat and calories) or brown it in oil in your soup pot, then drain and save for later.

chop your apples, onions, celery, carrots and bell pepper, and add it to a couple of tablespoons of olive oil (or where you just browned the chicken) ... sweat the holy crud out of that, stirring all the time ... add the flour, stir some more ... all the while stirring, add 2 tblspns more curry powder, 1 tblspn of ginger, ½ tblspn of paprika, the chutney and tomato paste then a cup of broth (you can sub 3 cans of the 14.5 oz size for this if not using homemade broth) ... more stirring ... bring it slowly to a rolling boil, chop up the chicken and add it to the mix ... more stirring, salt and pepper ... let simmer for 1 hour.

garnish with chopped parsley, serve with saffron rice and pita wedges ... drink heavily ... repeat, even hotter after freezing and reheating later.

Homemade crab cakes
fried in oil
spiced with peppers
from our soil
the remoulade sauce
is heavy with dill
and crushed red pepper
for more spice still
fresh asparagus
for our veggie
grilled, of course,
topped with lemon wedges
for dessert
it's nothing special
just plain old cherry
bullet popsicles
